Red Velvet Sandwich Cookies

Tomorrow is Valentine's Day!!!
Hope each of you have a happy day planned to spend with your sweetie!!!
As for me...Pappy has to work in the morning.
I told him the extra pay would be my Valentine's gift!!!
Just kidding!!! We'll be able to spend the afternoon together...plus...we have a "date" tonight to go to church to see Fireproof!!!

All of you are invited.
It's at 7:00 at Beech Springs Baptist Church in the "new" sanctuary.
A nursery will be provided!!!

Now...for today's recipe.
I found this recipe here: http://bakerella.blogspot.com/
(click on the picture and it will take you to her blog)

These cookies are super simple...made from a cake mix...my kind of baking!!!

Red Velvet Sandwich Cookies
1 Box red velvet cake mix*
1/2 Cup butter, softened to room temperature
2 Eggs
  • Preheat oven to 350 degrees
  • Mix ingredients until combined
  • Drop spoonfuls of cookie batter onto baking sheet about two inches apart
  • Bake for 10-12 minutes
  • Cool
Cream Cheese Filling
1/2 Cup butter, softened to room temperature
1 8 oz. Package cream cheese, softened to room temperature
1 1lb. Box of confectioner's sugar
1 tsp Vanilla
In a mixer, cream butter, cream cheese and vanilla;
gradually add sugar and mix until smooth

Makes about 24 cookies or 12 cookie sandwiches

In His Love...and with mine!!!

  1. I love these cookies, I make them quite often, but I always put the cream cheese on as icing, I'll have to try this "sandwich" thing next time, yummy!!!! I hope you had a very Happy Valentines Day!
