Friday Food Fun - Strawberry Short Cake

God Friday Morning, One and All!!!
One of our local TV stations....my favorite as far as news....WBIR....has an afternoon show called "Live at Five at Four".....you have to live around these parts to understand why it's called that. Anyway, there is a cooking segment on the show most days, and some of the best recipes come from Lulu's Tea Room, located in Powell, TN. They made this cake on there one day and it looked sooooo good....would you believe I actually made it?!?!?! Pappy says, "YAY"!!!! It must be the buttermilk (which I hate as far as a beverage to drink...gross!!!)....but it must be the buttermilk that gives the cake such a different texture...anyway....very good. And...the strawberry spread (she used Smuckers....I used Wally World brand....Great Value)....really makes for a nice consistency for the strawberries to spread over the cake slices!!!


Strawberry Short Cake

1 White Cake Mix
1 3 ounce package instant vanilla pudding
3 eggs
1 Cup buttermilk
3/4 Cup water
1/2 Cup oil
Preheat oven to 350
Mix ingredients for the cake and place in a 9 x 13 pan
Bake for 28 minutes and let cool before slicing

Slice 2 quarts strawberries, add 1 Cup of strawberry spread, 1/2 Cup water, and 2 teaspoons vanilla - Stir altogether


The recipe calls to cut the cake into 2" - 3" squares and place 3-4 into an individual serving dish and layer with the strawberry mixture and Cool Whip
Makes 12 individual servings
