Friday Food Fun

If I were a cook...which I'm not...I think I would want to make a bunch of the recipes that I find on the Betty Crocker web-site. If you don't already...you might want to sign up to get their e-mails showcasing different recipes. And...why don't I try out all the different yummy sounding recipes I find??? Because.....32 1/2 years ago I married a man who is strictly a meat and taters man....no veggies (only green beans and baked taters)....no casseroles....no cheese....plain hamburgers (meat and bun)....not even a salad.... so....there you have it!!!
I just drool over the recipes that sound sooooo good....and share them with y'all!!!
But...if any of you decide to make this one....will you save me a little dish
(as my Mamaw calls it...love her heart!!!)
Chicken and Three-Cheese Potato Casserole

1 box (5 oz) Betty Crocker® three-cheese potato mix
4 slices (1 oz each) American cheese, cut into 1-inch pieces
2 cups chopped deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
1 box (9 oz) Green Giant® frozen cut broccoli, thawed, drained
2 1/4 cups boiling water


1. Heat oven to 400°F. Spray 2-quart casserole with cooking spray. Place uncooked potatoes, cheese, chicken and broccoli in casserole.

2. In medium bowl, mix boiling water and sauce mix (from potato mix); pour over mixture in casserole. Stir to mix.

3. Bake uncovered 35 to 40 minutes or until potatoes are tender. Cover; let stand 5 minutes before serving.

Sounds like what I think of as a "comfort food".....especially since the weather is getting a bit cooler!!!
