Good Food Friday

I have a bookmark somewhere that a lady I used to work with got me that says,
"God loved us so much He gave us chocolate."
And, all God's children said....AMEN!!!!!

I LOVE CHOCOLATE!!!
It's always been a joke with most people who know me well....about how much I love chocolate. It's my Daddy's fault....if you can call it a fault!!! He loved all sweets, and I inherited my sweet tooth from him.
So...that being said....guess what the recipe for this week is?????
Yep....not only chocolate....but caramel, too. And, not just chocolate and caramel....but pecans. Oh, how much better can a recipe get....chocolate...and caramel....and pecans....yum-yum-yum....heavenly!!!
I truly haven't tried this yet....but I'm gonna.

Gooey Chocolate Caramel Fantasy
2 cups chocolate wafer crumbs (about 38 wafers)

1/3 cup butter, melted
30 vanilla caramels
1/2 cup caramel ice cream topping
1/4 cup whipping cream
2 cups chopped pecans
3/4 cup semi-sweet chocolate pieces
1/4 cup whipping cream
In a medium mixing bowl, stir together chocolate wafer crumbs and melted butter. Press onto the bottom of a 9-inch spring form pan. Bake in a 350 degree oven for 10 minutes. Cool slightly on a wire rack.
In a heavy medium saucepan, melt caramels in caramel ice cream topping over low heat, stirring often. Stir in the first 1/4 cup whipping cream. Remove from heat; stir in nuts. Spread over crust. Cool; cover and chill for 1 hour.
Topping: In a heavy small saucepan, melt chocolate. Remove from heat; stir in remaining whipped cream. Drizzle or spread over caramel-pecan mixture.
Cover and chill for at least 1 hour. Makes 12 servings.
In His Love...and with mine!!!
