Friday Food Fun

Don't you just love fresh veggies??? This is the first year in a long time that we've had a garden...and I'm lovin' the green beans and the cukes...and I just can't wait until our maters to start getting ripe. I planted red and yellow maters.....yellow, so I can hopefully share with my brother, who likes yellow maters best...less acid....you'll understand why that's important as you get older!!!!!
Anyway....I found this recipe for grilled veggies....and I also came across another one similar where you break your green beans....drizzle them with olive oil and salt...bake them in a 400 degree oven for about 15-20 minutes. I tried this one, and they are DELICIOUS!!!!

Grilled Vegetables

1 Eggplant sliced (skin on, sliced 3/8" thick)

1 Zucchini Halved (ends trimmed)

1 Yellow Squash Halved (ends trimmed)

1 Red Bell Pepper (quartered)

2 Large Mushrooms (wiped with damp cloth)

Olive Oil

Pinch of Salt, Pepper, and Oregano

Directions
Wash all vegetables (except mushrooms-wipe mushrooms with a damp cloth).
In a small mixing bowl place vegetables along with the olive oil. Toss the vegetables to coat with the olive oil. Season with salt, pepper, and oregano and toss again. Heat grill. Grill vegetables on all sides until they are tender. Be sure to cook eggplant until golden brown.

I don't see why you can't do these in the oven, too, just like I did the green beans!!!

  1. MMMMmmmmm veggies! Sounds good. I'm sure you can do those in the oven, it would just be called Roasted Veggies. MMMMmmmmmm still good, love veggies!!!!!!
