It's Friday!!!


This is how I feel about today being Friday....
....like doing a Snoopy happy dance!!!
(that one's for you, Missy!!)

In one sense,  this week has flown by....but in another way, it's just d...r...a...g...g...e...d!!!
I've been busy this week....but don't have a lot to show for it....except for a clean yard....well, not the burn pile!!!  We had the worse storm I've ever been thru in my life (and I'm O-L-D)....come thru this area on Tuesday afternoon.  Trees and tree limbs down everywhere....plus....we lost our corn.... :(
I had hoped it would straighten back up....but most of it is broken off....so....off to market we go for corn this year!!! 
But....at least nobody was hurt....just hurt feelings....and a tired body from dragging brush and raking and picking up sticks and leaves!!!  
Not that I didn't need the exercise!!!

On Tuesday, I showed y'all the rag quilt that I made for my cousin, Stephanie.  We have a very small family, and there were only 6 of us at the shower/brunch, but it was so nice.  We laughed and talked and ate!!!  Jess did most of the work, but my contribution was veggie pizza.  I got the recipe from Ms. Sandy from church.  She made it one night for our ladies Bible study last winter....and it was a huge hit....so I asked her for the recipe...and it's super duper easy!!!   
I'm going on memory....and we know that could be a bit dangerous....but since it was just last Saturday, surely I can remember!!!

Veggie Pizza

This is an actual picture of the one I made.

2 cans of crescent rolls
1 8 oz. package cream  cheese 
(I used fat free)
2 Tablespoons mayo, or salad dressing
(I used reduced fat salad dressing)
1 package Hidden Valley Ranch Dressing Mix
Veggies of your choice.....I used cauliflower, broccoli, cucumbers, carrots and red and green bell peppers.  I thought the more color, the better.
I would love onion on it, but not everybody likes onions!!!

Open up the crescent rolls, but don't pull them apart.  Press both cans around your pizza pan.  I'm not sure how long I baked 'em....just use the temp on the can, but watch them and take them out when they're golden brown.  While this is cooling, mix together your cream  cheese, salad dressing, and the ranch dressing mix. (this is what makes it so yummy).  Spread this on top of the cooled crescent roll crust.  
Then....put your chopped veggies on top.  
I sliced mine before putting on the veggies....that way each piece got some of all the vegetables!


This was a big hit at the shower...and it's low calorie...and very low fat!!!

I think that if you used a bit more mayo, or salad dressing, this would make an excellent dip, too!!!

  2. Ooh Deb, I love veggie pizza! My sweet MIL taught me how to make it years ago and we make it all the time for showers and etc. Hope you have a blessed weekend. Cindy

    Tomorrow I am having a baby shower for my youngest girl. So....why am I on the comuter when I need to dust and vacuum??? LOL

  4. Love veggie pizza, my sister-in-law always made it at Thanksgiving and Christmas and I even brought one to a ladies Bible study. They are just so good especially when you use fat free, reduced fat or something in that category. Love ya.......Robin
