Friday Food Fun

I'm sure almost all of us know somebody who has done....or is doing...or is planning to do....Weight Watchers. I feel like it's one of the best weight loss programs out there, since it's been around for so long!!
A friend of mine just hit the FIFTY POUND mark!!!
I just think that's absolutely amazing....she has lost
FIFTY POUNDS in just 3 months!!!!

To create fajitas with ease, use store-bought marinated chicken breast and frozen vegetables. Or, if you want to marinate your own chicken, sauté strips of boneless, skinless chicken breast in 1 teaspoon each liquid smoke and hot sauce.
Ingredients
8 medium tortilla, flour, fat-free, regular or whole wheat
(I love the Mission brand Life Balance Whole Wheat Tortillas...yummy!!)
2 tsp olive oil
(for years I missed out on how good olive oil is!!!)
1 pound(s) marinated chicken breast strips
(love, love, love about any kind of chicken)
1 pound(s) frozen mixed vegetables, fajita-style
(my fav frozen veggies....Great Value brand (Wally-World) Sugar Snap Peas...with brocolli, sugar snap peas, yellow squash, green beans, red and yellow peppers, carrots, and water chestnuts!!!)
1/2 cup(s) fat-free sour cream
(don't you just love sour cream....even FF is good!!!)
1/2 cup(s) salsa
(no comment on salsa...uh-oh, I guess that's a comment, huh?
But, I do like it!!!)
Instructions
Preheat oven to 300ºF.
Wrap tortillas in foil. Bake until warm, about 10 minutes.
Meanwhile, heat oil in a large skillet over medium-high heat. Add chicken and sauté until cooked through, stirring frequently, about 3 to 5 minutes. Transfer chicken to a serving plate, cover with foil and transfer to oven to keep warm.
In same skillet over medium-high heat, sauté frozen vegetables until tender-crisp, about 3 minutes. Serve chicken and vegetables with warm tortillas, sour cream and salsa. Yields about 2 tortillas, 3 ounces chicken, 1/2 cup vegetables and 2 tablespoons each sour cream and salsa per serving.
