Change can be good....

There's a local TV show that comes on in the afternoon....called Live at 5 at 4.  Live at 5 used to come on at 5:00 in the afternoon....but then it changed to 4:00....hence the new name.

Why am I telling you this? 
Because it has become apparent to me that I'm gonna have to sometimes do my Friday Recap of Scripture....on Saturday.....or maybe even for the rest of the year.
So....this week's recap....will be tomorrow.
I hope this doesn't upset anybody....but it's partly for my own sanity!!!  It takes me from 1.5 to 2 hours to go thru my notes and complete my post about the scriptures I've read that week.

So....that being said....I want to share something with y'all that I've not done in MONTHS....a recipe!!!
My friend, Dawn, sent this to me.....and it sounds delish!!!  Some of us who are trying to cut  back....might want to just let somebody else make it and share a sliver with us....or.....we could go ahead and make it....and walk an extra....oh, let's say....100 miles that week!!!

So....in honor of the upcoming Kentucky Derby.....here's the recipe for.....
Kentucky Derby Pie!

Prep Time: 30 minutes
Cook Time: 45 minutes

Ingredients:
• 3 eggs, lightly beaten
• 1 c. light corn syrup
• 1/2 c. brown sugar, packed
• 1 c. chopped pecans
• 1/4 t. salt
• 1/2 t. vanilla
• 6 oz. package semi-sweet chocolate morsels
• One 9 inch deep dish pie shell, unbaked

Preparation:
Preheat oven to 450 degrees. Mix all ingredients and pour into pie shell. Bake for 10 minutes and reduce heat to 350 degrees for 35 minutes more. Serve with whipped cream or vanilla ice cream.
(may I suggest Mayfield's vanilla ice cream....
....it's the best!!!)
