Frivolous Friday!!!



Happy Friday, my dear friends!!!

This has been such a crazy week for me....full of sickness and lots of things going on with our church family!!!  I guess some weeks are just like that, but WOW!!!  I'm hoping next week that things will settle down just a bit!!!

First "frivolous" thing I have to show you is my latest outdoor flag.  My friend, Dawn, asked me to post each time I change out my flag.  Well, I think I forgot the last time....so here's the one that I just hung outside in honor of Memorial Day.....



I saw this recipe and just knew I would have to share it with y'all.  If I make these....and I might just do it because Pappy loves angel food cake....I would use fat free and sugar free in most of the ingredients....and they wouldn't be bad for us at all!!!

(I made the Oven Fried Taters last weekend using sweet taters.....they were soooo yummy!!!)




 Angel Lush Cupcakes

1 pkg. (16 oz.) angel food cake mix
1 pkg.  (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
2 cans (8 oz. each) DOLE Crushed Pineapple in Juice, undrained
1 cup  thawed COOL WHIP Whipped Topping
2 cups assorted fresh berries (blueberries, raspberries and sliced strawberries)

HEAT oven to 375ºF.
PREPARE cake batter as directed on package; pour into 30 paper-lined muffin cups, filling each cup 2/3 full. Bake 12 to 15 min. or until tops are golden brown and cracks feel dry. (Note: If baking in batches, refrigerate remaining batter in bowl until ready to pour into lined muffin cups and bake.) Cool cupcakes in pans 10 min.; remove to wire racks. Cool completely. 
MIX dry pudding mix and pineapple in medium bowl. Gently stir in COOL WHIP; spread onto cupcakes.
TOP with berries.

Yummy....nice and light and not so many calories, either!!! 
Can't beat that with a stick!!!

  1. Hello, new friend! :) Maxine gave me a chuckle! The recipe looks great, but I would probably do the angel food cake and mix up the "icing" to use as a topping... 'cause I'm lazy like that. LOL I agree with the sugar-free/low fat idea and then you don't have to feel a bit guilty about having it. Hope next week is better for you!

  4. Hi Deb, That looks like a great recipe and I love the flag! I've read that angel cake is the best thing to eat for a treat if you are on a diet and just need a break. Good choice!
