First Day of Spring Fun!!

I think I enjoy Friday's post so much because I get so down from my post on Thursday's. I love being able to put requests on here for those in need. It is very humbling to me that people put so much confidence in me...but, I've said this before...this is not "MY" blog...it belongs to each of us...and we want God to have all the glory!!!
Plus...you guys....well, mostly gals....
are AMAZING PRAYER WARRIORS!!!
Thank you, thank you, thank you!!!

Anyway....
It's Friday!!!
And....it's the first day of S-p-R-i-N-g!!!
So...in honor of S-p-R-i-N-g....
I changed out my blog....
do you like it?????

Isn't it quite "springy"?!?!?!?
(There might be another change before Easter if I can find just the right Christian background!!!)

I bet the thoughts of spring-time makes so many of you just wanna shout and sing...it does me!!!
Of course...like I told a friend....
we WILL have more cold weather....
Whipporwill Winter....Blackberry Winter....Dogwood Winter....
then, spring will finally be sprung and we'll all be complaining about the hot weather before you know it!!! Don't you know that our poor precious Lord just looks down and shakes His head at us sometimes....and probably thinks....

"I can never please them....they're never happy....always complaining"!!!!

Anyway...(I use that word way too much!!) I asked some of my "peeps" for a light recipe for today...since it is the first day of S-p-R-i-N-g!!!
I got three responses....so....this is a first for my little blog....today, you get not one, but THREE delicious recipes!!!!
YEAH!!!
And....one of them includes pineapple...which I dearly love....one is an idea for a light salad....and, believe it or not....
I LOVE SALADS....
and the other one...CHOCOLATE!!!!
I know...off limits for a few more weeks....
SEVENTEEN more days, to be exact...but, who's counting, right????
I did fall off the wagon, like I fessed up....but, I'm doing so much better with not eating sweets than I ever thought was possible!!!

Oh, one more thing....I didn't want to mention this yesterday, because I feel like our Thursday post needs to remain serious...but...yesterday was my
FIVE HUNDRETH post.
Who would have ever thought that I could come up with 500 different topics?!?!? I truly don't think I could have on my own....not without God!!!
So...without any further rambling on my part...here are your Friday recipes!!!!

Recipe #1 - Light Spring Salad
This is Ms. Janis' version of a light spring salad...yummy...I keep wondering when I'm gonna get invited over to her house for supper!!!!
(just kidding, Ms. Janis....well, Pappy would probably come over just for a piece of your pecan pie!!!!)

Anyway...there I go again....here are her exact words:

"I like to combine lettuce, romaine lettuce and baby spinach and then load it up with English cucumbers, radishes, cauliflower, broccoli, celery, onion, tomatoes, sliced boiled eggs, crispy bacon crumbles, water chestnuts, slivered almonds, olives, ham or steak thin sliced – pretty much whatever I have on hand. I like Italian or raspberry vinaigrette or even coleslaw dressing."

Yum, yum, yum....I do love me a good salad....
and I LOVE RASPBERRY VINAIGRETTE DRESSING!!!!

Recipe #2 - Pineapple Lush

This one is another delicious recipe from Ms. Dawn....she's always got a good recipe handy!!! I just wish we lived closer than 2 hours apart!!! I haven't seen her since before Christmas.... :( (and...when you read this....please say a special prayer for her...she's having the skin cancer removed this morning!!!)

1 package Jello Vanilla Instant Pudding,
or Sugar Free Pudding Mix
1 Can Crushed Pineapple, Undrained
1 Cup thawed non-dairy whipped topping,
or, lite whipped topping
1 Angel Food Cake (10 oz)
1 Cup Whole Strawberries
Mix pudding mix and pineapple (with juices) in bowl.
Stir in whipped topping (Cool Whip)
Cut cake horizontally into 3 layers - put bottom layer on serving plate and top with 1/3 of the mixture.
Repeat until you have a 3 layer cake
(notice in the pic how it's smaller at the top than bottom)
Refrigerate for one hour and top with berries before serving.

Recipe #3 -
I'm going to call this one
"Chocolate Lush - Missy Version"
Use a 9" x 13" Glass Pan
2 Boxes Sugar Free Instant Chocolate Pudding 2% or 1% Milk Chocolate Graham Crackers 2 Tubs Sugar Free Cool Whip (you won't use all of it) In a large mixing bowl, mix the sugar free instant chocolate pudding and milk
(according to measurements on pudding box), and set aside.
In the 9" x 13" glass pan, put a layer of the chocolate graham crackers
(I break them into 4 pieces each...easier for serving)

Add a layer of the chocolate pudding, then a layer of sugar free Cool Whip.
Then, layer graham crackers, pudding, and Cool Whip again.
Refrigerate for 2 hours.
(I have decorated the top of this with chocolate Teddy Grahams for a baby shower!)
Again...yum, yum, yum!!!

So...there you have it.
I'm hoping to make both the pineapple and the chocolate desserts....
maybe for Easter!!!
