Friday Food Fun

If anybody is interested....today is Day TEN of my fast from sweets (only THIRTY days to go!!!)....and I've done great!!!
I even baked chocolate chip cookies for some sweet ladies, and didn't eat a single one!!!
I've had no cookies, cakes, candy, or ice cream!!!
My buddy, Robin, e-mails me almost every day and reminds me "NO SWEETS"...or, that I'm sweet enough without them....now, ain't that "sweet"?!?!?!?
She's the only one who has held me accountable...and for that I am very grateful, since that's what I asked for!!! Now, just pray that I can make it on March 12th...that's the night of our Ladies Night Out...our kick-off to our Ladies Bible Study...and everybody is supposed to bring their favorite dessert.....
I will be taking my very own private plate of FRUIT!!!!!

I've been asking some of my e-mail buddies for some low-cal recipes, and here's one that Ms. Tonya sent me.
This is a WW recipe for veggie pizza, and it sounds great!!!
(sorry, I don't have a picture!!!)

10 oz. package of frozen spinach (thawed and squeezed dry)
1 cup fat-free Ricotta Cheese
2 garlic cloves, minced
1 tsp. dried Basil
1 tsp. dried Oregano
2 tsp. olive oil
1 Zucchini, sliced
1 pepper, green or red or both, seeded and cut into 1 inch strips
1 onion, sliced
4 large whole wheat or FF Flour Tortillas
(or Pita bread, whichever you prefer)
1/2 cup tomato sauce
1 cup shredded low fat or FF Mozzarella Cheese
Preheat oven to 400 degrees
In med. bowl, combine spinach, ricotta cheese, garlic, basil and oregano.
using a large nonstick skillet, heat olive oil. Add zucchini, pepper and onion, and cook until "tender-crisp", about 4-5 minutes , stirring as needed.
Arrange the pitas, or tortillas, on a nonstick baking sheet.
Spread about 1/2 cup of spinach mixture over each one, top each one with tomato sauce and sauteed veggies.
Sprinkle mozzarella cheese evenly over each one and bake until heated through and cheese is melted, about 15 minutes.

    I am proud of you with staying away from sweets. If I bake sweets I eat them. I heard about a little boy that is swearing off all chocolate during lent.
