Friday Food Fun

You know all this rainy.....dreary.....weather we're havin....and the fact that it's supposed to turn much cooler next week.....just makes me want a big bowl of soup!!!! This was the topic of some e-mails between friends last week...and Ms. Janis sent me her recipe for "Dump Vegetable Soup".....which gets its name because you just dump in the veggies you have on hand!!
This would be a wonderful dish to make for tomorrow....it's supposed to rain here....all day long....and the game comes on at 7:00....so why not put a pot of this on and let it simmer all day...and enjoy it at game-time?!?!?

VEGETABLE DUMP SOUP

Dice up potatoes, chop onions, chop a garlic clove, and finely chop a stalk of celery. Add about a cup of water and a quart box of Swanson’s chicken broth (fat-free and MSG free). Let this cook for a little bit before you add either fresh, frozen or canned vegetables.

Ms. Janis used canned vegetables which included:

2 cans whole kernel corn
2 cans kidney beans
1 can chick peas
1 can sliced carrots
1 pint jar home canned tomatoes

Seasonings added were:

Salt and pepper to taste
Nature’s Seasoning
Oregano
Thyme
Parsley
Cumin
Butter
Several shakes of Worcestershire sauce

When the soup starts boiling, reduce heat to a medium simmer. Add frozen peas and pasta or rice when soup is nearly done. Serve with hot cornbread.
Sounds like some good comfort food to me!!!

  1. Sounds wonderful and probably could eat some after my mail route tomorrow, may make chili instead, don't have all ingrediants for soup.
