Friday Fotos....and a Recipe.....

Chef Walter cooks/bakes something each day during the 12:00 newscast on one of our local TV stations.  One day recently he made this dish and I knew it was something Pappy would eat.....
'cause he's kind of a picky eater.
It really was delicious!

Cran-Apple Pork & Sweet Potatoes

Ingredients:
1 cup applesauce
( I used 3 of the individual cups )
1 or 2 Tbs brown sugar or honey
( I used honey )
3 large sweet potatoes, peeled and sliced
2 to 2 1/2 lbs pork chops or cutlets
1 can whole berry cranberry sauce
( I didn't use the whole berry because Pappy doesn't like it )
Salt and Pepper to taste

Directions:
Pour applesauce into 3 1/2 quart slow cooker.
Add the sweet potato slices and sprinkle or drizzle with brown sugar or honey.
Salt and pepper lightly.
Add pork and sprinkle lightly with salt and pepper.
Spoon cranberry sauce over all.
Cover and cook on low for 7 to 9 hours.
( It was completely done at 7 hours )

The pork absolutely fell apart and was so tender.....
and good!!!

Psalm 34:8
Taste and see that the Lord is good.
Oh, the joys of those who take refuge in Him!

HOPE everybody has an awesome weekend!
